When it comes to nutrition, everything I do is based upon my desire…

to bring together culinary art and ultimate nutrition and make it doable in your everyday life. And this recipe is no exception.

INGREDIENTS

For the Pasta

  • 1  spiralized butternut pumpkin

 For the Hempseed Parmesan

  • ½ cup hemp seeds
  • ¼ cup nutritional yeast
  • 1/4 cup sesame seeds
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon fine sea salt, to taste

To Assemble

  • Fresh basil

 PREPARE

Spiralize the pumpkin and put it aside in a bowl. (I’m using a spiraliser. If you don’t have one you can use a peeler to create tagliatelle-shaped pasta)

Mix the ingredients for the parmesan. (These can be stored in a glass jar for future use)

Add the parmesan mix on top of the pumpkin and toss it together. 

Plate the pasta and sprinkle some more parmesan and fresh basil.
